The material and quality are unsurpassed. This Chef knife is handmade in Japan by Master Blacksmith Hattori. The core of the knife is made of Cowry X powdered steel in between two layers of Damascus steel. The cutting edge has a Rockwell hardness of 63-65° for an incredible long lasting edge. The Damascus layers are made up of more than 300 layers of nickel and stainless steel. The handle is resin impregnated black linen micarta. The knife is in a hand crafted wood box with Mr. Hattori's "chop" (signature stamp). The blade length is just over 10 1/2" and the overall length is 16". The knife is new with original edge.
